It’s been quite a journey but one we’re incredibly proud of.
Back in the late 1990s, one of our regulars was asked the simple question by her father: “What would you like to drink?”
Without hesitation, she replied, bold as anything, “Coffee… but with a Baileys in it.”
Now, history could have gone very differently at that moment. There was every chance she’d be laughed off, dismissed, or told to behave. But instead, our bar staff recognised brilliance when they heard it… and made it happen.
And just like that, Baileys Coffee was born.
Since that moment of quiet genius, Nina Conacher, has gone on to achieve far more than just changing the way we drink coffee. She became a master swimmer, even earning the title of Yorkshire Champion — not bad for someone who casually revolutionised a classic drink before it was cool.
Today, she’s all grown up — a wonderful mum to three (Isobel, Madeleine and Daniel), owner of a dog called Luna, and still someone with impeccable taste… particularly when it comes to a good glass of red wine (even on a school night).
We’re honoured to have witnessed the beginning of something so iconic — and even more delighted to share the story with you.
